I really liked the version you came up with, but ultimately I think that the format was too complicated for beginners to edit, if they wanted to add categories. My ultimate concern is making new editors frustrated as we try and expand the editor base. Otherwise, I really did like the way your restaurant version looked, I just thought the table of contents version is less likely to scare away editors.
